Recipe for Swiss Steak

  
Swiss Steak

Ingredients:
1-1/2 to 3 pounds of round steak (about 1 inch thick)
1/3 cup flour
2 large onions, sliced
2 tablespoons fat
1-1/2 teaspoons salt
1/8 teaspoon black pepper
1 clove garlic, cut fine
1 stalk celery, diced
1-1/2 cups canned tomatoes
1/2 cup water
1/2 green pepper, sliced
chopped parsley Lay the meat on a breadboard and sprinkle both sides with the flour.  Using a mallet, pound the flour into the steak on both sides.  The flour will become absorbed into the steak.  Sauté the onions in oil and remove from pan. Add the meat  to the pan and brown well on both sides. This will take about 10-20 minutes.  Sprinkle with salt and pepper. Place the peppers, tomatoes, garlic, celery and the sautéed onions over the steak.  Cover the pan and simmer for about 1-1/2 hours or until tender.  Serve over noodles, rice or mashed potatoes.  Garnish with parsley. Serves 4-6, depending on the amount of beef you use. (You can add sliced carrots and potatoes to the pan during the last 45 minutes of cooking)  Great way to use cheaper cuts of beef and save on your budget!  Tastes great!
